Mumbai: Celebrity chef Harpal Singh Sokhi recently returned from Japan with a renewed appreciation for the country’s culture, discipline, sustainability practices, and culinary heritage. Reflecting on his experience, the renowned chef described the visit as both eye-opening and inspiring, emphasizing that Japan offers valuable lessons in environmental preservation, ethics, and craftsmanship.

Speaking about his trip, Chef Sokhi said that Japan’s commitment to cleanliness, discipline, and respect for nature left a profound impression on him. He noted that greenery was visible everywhere he traveled, highlighting the country’s dedication to environmental conservation.

“My experience of Japan was overwhelming. It is a country from which we can learn ethics, discipline, manners, cleanliness, and respect for nature. Everywhere I went, I saw greenery and a conscious effort to preserve the environment,” he shared.

He also praised Japan’s resilience in the face of natural disasters. Despite regularly experiencing earthquakes, typhoons, and other challenges, the nation’s ability to recover quickly and rebuild efficiently stood out to him as a remarkable example of collective determination and preparedness.

As a culinary professional, Chef Sokhi was particularly fascinated by Japan’s unwavering commitment to its own food culture. He observed that while many countries adapt menus to cater to global tastes, Japanese establishments proudly celebrate and preserve their culinary traditions.

“Japanese cuisine remains at the center of everyday life. Even hotel breakfasts are deeply rooted in local flavors and traditions. They are proud of their food culture and continue to preserve it despite global influences,” he explained.

The chef pointed out that while younger generations are increasingly exposed to international foods such as pizzas and burgers, a large portion of the population continues to embrace traditional Japanese cuisine as an integral part of their lifestyle.

One of the most memorable aspects of his trip was exploring Japan’s famous knife culture. Chef Sokhi was deeply impressed by the precision and craftsmanship associated with Japanese culinary tools and the extraordinary skills of local chefs.

According to him, Japan has dedicated marketplaces that specialize exclusively in knives, attracting culinary professionals and tourists from around the world. These handcrafted knives are often considered prized souvenirs and essential tools for serious chefs.

“The knife skills of Japanese chefs are exceptional. Their understanding of ingredients, particularly meat and seafood, is remarkable. The level of precision and dedication they bring to their craft is inspiring,” he noted.

He was particularly intrigued by the rigorous training required to prepare Fugu, the highly poisonous pufferfish that is considered a delicacy in Japan. Chefs undergo years of specialized training before receiving certification to handle and serve the fish safely.

The visit was organized by Ajinomoto and included a select group of chefs and influencers from India. The initiative aimed to provide participants with a deeper understanding of Ajinomoto and its role in Japanese cuisine, challenging common misconceptions surrounding the ingredient.

Chef Sokhi also reflected on the unique characteristics of Japanese cuisine, which is globally recognized for its simplicity and respect for natural flavors. Unlike cuisines that rely heavily on spices and seasoning, Japanese cooking focuses on preserving the authentic taste of each ingredient.

“Japanese cuisine is rooted in balance. The natural flavor of the ingredients remains the hero of every dish. There is minimal use of spices, and every element is carefully selected to maintain harmony,” he explained.

Comparing Japanese and Indian food traditions, he highlighted India’s extraordinary culinary diversity, where regional flavors, ingredients, and cooking techniques change dramatically across states and regions. However, he acknowledged that Japan has mastered the concept of umami—a distinct savory taste that has become a defining feature of its cuisine.
